Follow the directions on the box of rice/grain to cook.
Sauté chopped onions in olive oil for a minute or two on medium to high heat. Add ground beef, salt. Stir in chopped kale and minced garlic. Sprinkle in pine nuts. Salt both the meat mixture and rice/grains to taste.
When the meat and rice/grains are cooked, scoop a serving of each into a bowl and top with grated Parmesan cheese. Mix + enjoy!
The leftover meat mixture can be frozen and served with freshly cooked grain of choice.
