Kale Beef Bowl

As simple as it sounds—earthy kale and browned beef join pine nuts and parmesan over the rice of your choice.

Ingredients  

  • 1-2 Tbsp olive oil
  • 3 lbs ground beef
  • 1 yellow onion chopped
  • 5-6 cups kale chopped
  • 1-2 garlic bulbs minced
  • 3 Tbsp pine nuts
  • 2 Tbsp grated parmesan cheese
  • 4 cups rice (cooked)

Instructions

  • Follow the directions on the box of rice/grain to cook.
  • Sauté chopped onions in olive oil for a minute or two on medium to high heat. Add ground beef, salt. Stir in chopped kale and minced garlic. Sprinkle in pine nuts. Salt both the meat mixture and rice/grains to taste.
  • When the meat and rice/grains are cooked, scoop a serving of each into a bowl and top with grated Parmesan cheese. Mix + enjoy!

Notes

The leftover meat mixture can be frozen and served with freshly cooked grain of choice.
