Buttered Cod
4-6cod fish filets
1tspgarlic powder
1fresh lemon
4-6tbspsalted butterone per filet
Pineapple Salsa
3-5tomatoesdiced
1yellow pepperdiced
1oniondiced
1/4cuppineapple or mangoes (or both!)diced
1/2bulb of garliccrushed
1tbspolive oil
1/2cupcilantrochopped
1/4cupItalian parsleychopped
Instructions
First, pre mix the salsa by combining tomatoes, yellow pepper, onion, pineapple or mango, and garlic
Add olive oil, cilantro, basil, parsley, and salt to taste
Mix all salsa ingredients and let sit
Put the cod in tin foil and drizzle with lemon juice
Sprinkle with garlic powder, salt and paper
Put the cod filet on the grill on medium heat (approx. 375) with the foil open
Cook for approx. 5 minutes until hot, then add a thin pat of butter
Add more garlic powder, salt and pepper
Cook for approximately 2-5 more minutes depending on how thick your filet is. Serve hot topped with salsa.
Notes
You can add in whatever vegetables you have around to the salsa! I did a little celery the last time we made it and loved it.
