2-4stalksgreen onion
1/2cupgoat cheese
1cupbaby greens such as small swiss chard leaves, spinach or watercress
4thin slices of prosciutto(about 2 oz.)
2tbspolive oil
2tbspItalian parsleychopped
Salt and pepper to taste
HoneyOptional ( We love a hot/ spicy honey ) for drizzle
Instructions
Finely chop about ¾ of the green onions and cut thin 3” long slivers of the remaining ¼ and set aside.
In a small bowl, stir together chopped green onions, goat cheese, and parsley, and season with salt and pepper.
In a medium pan, heat olive oil and chopped green onion and let saute until it begins to brown.
Remove from heat and transfer green onion onto a paper towel to drain.
Pour excess olive oil into the cheese mixture. Salt and pepper to taste.
Toast bread or bake in the oven and top with cheese mixture and laybaby greens on each.
Finish by draping prosciutto over and garnish with green garlic slivers.
