Green Onion Prosciutto Toasts

A simple savory afternoon snack or party starter, these babies are rich, crunchy and oh-so-pretty.   Here’s our spin on a favorite recipe from Sunset Magazine
Serving Size: 4 People, Prep Time: 10 Minutes, Cook Time: 15 Minutes

Ingredients  

  • 2-4 stalks green onion
  • 1/2 cup goat cheese
  • 1 cup baby greens such as small swiss chard leaves, spinach or watercress
  • 4 thin slices of prosciutto (about 2 oz.)
  • 2 tbsp olive oil
  • 2 tbsp Italian parsley chopped
  • Salt and pepper to taste
  • Honey Optional ( We love a hot/ spicy honey ) for drizzle

Instructions

  • Finely chop about ¾ of the green onions and cut thin 3” long slivers of the remaining ¼ and set aside.
  • In a small bowl, stir together chopped green onions, goat cheese, and parsley, and season with salt and pepper.
  • In a medium pan, heat olive oil and chopped green onion and let saute until it begins to brown.
  • Remove from heat and transfer green onion onto a paper towel to drain.
  • Pour excess olive oil into the cheese mixture. Salt and pepper to taste.
  • Toast bread or bake in the oven and top with cheese mixture and laybaby greens on each.
  • Finish by draping prosciutto over and garnish with green garlic slivers.
  • Drizzle olive oil or honey over and enjoy!
