Simple Celery Broth Soup

This rich and celery broth soup is a versatile foundation for the addition of whatever seasonal vegetables you have on hand. It has the most beautiful flavor and is a total crowd pleaser!
Serving 4-5 people, Prep Time: 15 Minutes, Cook Time: 20 Minutes

Ingredients  

  • 3-5 Tbsp olive oil
  • 1/2 white onion diced
  • 2 celery bunches roughly chopped
  • 3-5 garlic cloves minced
  • 3 cups chicken broth
  • 1/2 cup heavy whipping cream
  • 1 cup mushrooms roughly chopped
  • 1/4 cup cauliflower roughly chopped
  • 1 bunch of fresh parsley roughly chopped

Instructions

  • In a large pot, sauté onion, garlic and celery on medium heat until softened.
  • Add in chicken broth and bring the mixture to a low boil.
  • Blend (An immersion blender is easiest.)
  • Add in heavy whipping cream and continue to blend until there are no large chunks of celery.
  • Strain the liquid/broth into a new pot through a sieve and dispose of the leftover celery fibers. 
  • ***TIP: we found pressing a bowl into the strainer helps get a lot of the liquid out!
  • Turn the heat down to low and simmer.
  • In a separate pan on medium heat, sauté the mushrooms and cauliflower in olive oil and season with salt. Keep separate!
  • Once the mushrooms and cauliflower are tender, turn the heat on low.
  • Pour the broth into a serving bowl and stir in mushrooms and cauliflower. Garnish with fresh chopped parsley and enjoy this pretty soup!

I really hate the smell and taste of celery, but this soup looks so delicious. But I think I will not try it. I can stand its taste.
