1bunch of celery
1lbpotatoesapprox. 20 baby yellow
1yellow onion
4-5garlic cloves
3 1/2cupschicken broth
1/4cupheavy cream
Instructions
Roughly chop celery, potatoes, and onion
Set aside some celery leaves for later
Sauté on medium-high heat until onion and celery are softened and salt to taste
Pour chicken broth into mixture, drop in garlic, and simmer until potatoes after softened (approx. 5 minutes)
Blend until smooth and creamy with no lumps (An immersion blender is easiest)
Add in heavy cream and blend again
Pour into bowl, garnish with chopped celery leaves, olive oil, and a little coarse salt. Enjoy!
