Pure Style Home Fall Challenge- The Soups!!

I received a bunch of delicious-looking soups via email for last week’s Fall Challenge – which was to make and enjoy some SOUP- and I’m so excited to share this post with you!!

First up is Loretta of Eco Happy Style who made this absolutely gorgeous “Quick Beet Soup” in her Grandma Honey’s china.  (And now I totally want to be a “Grandma Honey” one day!! 😉  I’ve been on a beet kick lately and can’t wait to try it:

Next is Edyta’s “Tomato Been with Roasted Garlic” Soup and she writes, “soups are a staple at my house, my mom has soup on the table almost every day and it has been like that ever since I can remember so I love making it in my home as well, it just feels good 🙂 It’s either a first course to dinner or just soup but it’s always hot and yummy any time of the year… The one I made this week is a Tomato bean with roasted garlic & brown rice topped with fresh basil, it’s divine and so hearty. Yum, I usually make a huge pot of soup and eat it throughout the week as I did this one. The one in the photo I had for lunch with some toasted bread and spinach.”

Mm mm!!!!  Look at that spinach toast too!!


Tawna’s Chicken Tortellini Soup looks like Heaven:


8 cups chicken broth

1 large boneless, skinless chicken breast

2 teaspoons basil

2 tablespoons parsley

1 cup chopped carrots

1 minced onion (about 1 cup)

1 cup chopped celery

1 bag 3-cheese tortellini noodles

1 small can cream of chicken soup

Fresh baby spinach



Place chicken broth, chicken breast, onion, basil, parsely, and celery in a large saucepan.  Bring to a boil, and cook chicken breast until it is tender and can be shredded with a fork.  Place shredded chicken back in the broth, and add carrots and tortellini noodles.  Bring it back to a boil, and cook noodles until done. When the noodles are almost done, and the broth is still boiling, add the cream of chicken soup.  Stir until the broth is smooth. Remove from heat. Serve with raw baby spinach in each bowl.
