We found our first lion’s mane mushroom and (after looking it up and confirming it with a local mushroom expert!) we went back and got it and cooked it up! Lion’s mane is said to stimulate brain cells, support mental health, has anti-inflammatory properties, and promotes gut health. It is said to be one of the most delicious mushrooms out there, having a similar consistency and taste to crab. Serves 2, Prep time: 5 minutes, Cook time: 10 minutes

Clean fresh lion's mane mushrooms (We found ours in the backyard foraging but some grocery stores carry fresh lion’s mane and you can also order it online!)
Ours was pretty dried out so we soaked it in saltwater for 20 minutes to rehydrate and plump it up
Gently pat dry and cut into thin slices in the direction it grows
In a small pan on medium heat fry up some butter
Add in the slices of mushroom and let cook for just a few minutes until it starts to get golden brown. Season with Chesapeake Bay style seasoning and cook for an additional minute or two. Top with chopped chives or onion grass.
