lion's mane mushroom

We found our first lion’s mane mushroom and (after looking it up and confirming it with a local mushroom expert!) we went back and got it and cooked it up! Lion’s mane is said to stimulate brain cells, support mental health, has anti-inflammatory properties, and promotes gut health. It is said to be one of the most delicious mushrooms out there, having a similar consistency and taste to crab.

  • 1 lion's mane mushroom sliced
  • 2 tbsp butter
  • 2 tbsp chives or onion grass chopped
  • 2 tbsp Chesapeake Bay style seasoning

Instructions

  • Clean fresh lion's mane mushrooms (We found ours in the backyard foraging but some grocery stores carry fresh lion’s mane and you can also order it online!)
  • Ours was pretty dried out so we soaked it in saltwater for 20 minutes to rehydrate and plump it up
  • Gently pat dry and cut into thin slices in the direction it grows
  • In a small pan on medium heat fry up some butter
  • Add in the slices of mushroom and let cook for just a few minutes until it starts to get golden brown. Season with Chesapeake Bay style seasoning and cook for an additional minute or two. Top with chopped chives or onion grass.
