3-5Tbspolive oil
1/2white oniondiced
2celery bunchesroughly chopped
3-5garlic clovesminced
3cupschicken broth
1/2cupheavy whipping cream
1cupmushroomsroughly chopped
1/4cupcauliflowerroughly chopped
1bunch of fresh parsleyroughly chopped
Instructions
In a large pot, sauté onion, garlic and celery on medium heat until softened.
Add in chicken broth and bring the mixture to a low boil.
Blend (An immersion blender is easiest.)
Add in heavy whipping cream and continue to blend until there are no large chunks of celery.
Strain the liquid/broth into a new pot through a sieve and dispose of the leftover celery fibers.
***TIP: we found pressing a bowl into the strainer helps get a lot of the liquid out!
Turn the heat down to low and simmer.
In a separate pan on medium heat, sauté the mushrooms and cauliflower in olive oil and season with salt. Keep separate!
Once the mushrooms and cauliflower are tender, turn the heat on low.
Pour the broth into a serving bowl and stir in mushrooms and cauliflower. Garnish with fresh chopped parsley and enjoy this pretty soup!
