3cupschicken broth
1lbground turkey
1/4white onion
4-5garlic cloves
1/4cuppine nuts
2cupsfresh spinach
1/4cupgorgonzola cheesecrumbled
1/2lbbaby potatoescut in half
Instructions
In a large pot on medium heat begin to sauté the onion and garlic in olive oil.
Next, add in the ground turkey and pine nuts. Season with salt and pepper.
At the same time, in a separate pot, sauté the chopped potatoes over medium-high heat and season with salt and pepper and cook until softened.
Once the turkey has fully cooked, lower the heat and mix in the crumbled gorgonzola and spinach and let simmer.
Add potatoes to the turkey mixture. Add in the chicken broth and stir.
