Herb Frittata

This wholesome and herby frittata is loaded with grilled chicken and vegetables, making it the perfect way to start or end the day.

Ingredients  

  • 18 eggs
  • 1/2 cup Swiss chard minced
  • 3/4 cup onion minced
  • 1/2 cup green pepper minced
  • 1 1/2 cup grilled chicken diced
  • 2-4 Tbsp lemon juice
  • ~ 10 fresh tomatoes diced
  • 1/4 cup basil chopped
  • 1/4 cup parsley chopped
  • 1/4 cup chives chopped
  • 1/2 cup cheese

Instructions

  • Sauté swiss chard, onions, garlic, peppers.
  • Add diced grilled chicken and some lemon juice to sauté mixture.
  • Lightly coat casserole dish in olive oil.
  • Whip 18 eggs in a bowl and pour it into the casserole dish.
  • Spread in sautéed mixture to casserole dish.
  • Add fresh diced tomatoes, and chopped basil, parsley and chives.
  • Spread cheese on top (I did manchego & parmesan).
  • Add LOTS of salt & pepper.
  • Heat in the oven on 375 for 20-25 mins.
  • Cut around the sides so it doesn’t stick and put a cutting board over the dish and quickly flip it. Remove casserole dish.
  • Top frittata with chives, cheese, basil, salt & pepper.
