2lbsground turjey
2-4Tbspolive oil
3/4head of savoy cabbageshredded
4cupssliced mushrooms
4-5eggs
3/4garlic bulbminced
3/4cupscallionschopped
1/2cupparsleychopped
1/4cupsour cream (optional)
1Tbspsesame oil
1Tbspsesame seeds (optional)
Instructions
Sauté diced onions in a pot/pan with olive oil on medium heat.
Add in ground turkey and stir until almost cooked.
Add in salt, garlic, and shredded savoy cabbage and stir, adding olive oil as needed.
When cabbage is wilted, add in sliced mushrooms and stir to cook.
Strain any excess liquid from the mushrooms and stir.
Crack eggs in the mixture and scramble into the mixture until cooked.
Stir in (optional) sour cream.
Add sesame oil, chopped scallions, parsley and stir in.
Salt and pepper to taste.
Serve hot or in a bowl and top with (optional sesame seeds) and enjoy!
It can be served in a bowl alone or added into lettuce leaves or wraps or thrown over rice.
