Inspired by the foraged watercress we found, this pretty warm bowl of goodness is earthy and flavorful.

Ingredients  

  • 2-3 Tbsp olive oil
  • 15 oz chickpeas
  • 2-3 cups mushrooms sliced
  • 2 tsp lavendar
  • 3-5 garlic cloves chopped
  • 4 cups watercress

Instructions

  • Blanche approximately 4 cups of watercress, squeeze out all the water and roughly chop.
  • Pour approx 1.5 tablespoons olive oil in a bowl and add in chickpeas, mushrooms, 1 tsp lavender, and garlic and stir.
  • Pour 1 tablespoon olive oil in a large pan with a lid on medium heat and add in all ingredients from bowl. Cook on low for 7-10 minutes, covering with a lid and stirring frequently until mushrooms soften.
  • Add in watercress and 1 more tsp lavender. Cook 5-10 more minutes.
  • Salt to taste, serve and enjoy!
