Cauliflower, radicchio, and herbs get a rice-like treatment here, with a splash of indulgent white truffle oil for good measure. Choose a colored cauliflower for a delightfully pretty dish!

1-2Tbspolive oil
1/4cupdiced onion
3-4cupscauliflowerminced into "rice"
2-3garlic clovesminced
1 1/2cupsradicchiochopped into 1" pieces
1/4cupparsleychopped
1Tbspdillchopped
2Tbspbasiljulienned
1-2Tbspwhite truffle oil
2cupssavoy cabbagejulienned and served on the side
Instructions
To start, finely chop the cauliflower.
In a large saucepan, heat the olive oil over medium heat and add in cauliflower.
Chop radicchio, and mince the garlic and add to the saucepan. Sauté until the radicchio has softened.
Pour in a tablespoon or so of truffle oil.
Lower the heat and add in fresh herbs and garlic and let simmer. Add more truffle oil depending upon your preference.
Season with salt to taste and serve with fresh julienned cabbage.
