A salty classic, pesto instantly elevates any meal with vibrant flavors. Pesto is a staple in our house and we use it on pasta, to top off soups, fresh veggies and casseroles!

1cupfresh basil leavesfinely chopped
1/4cupItalian parsley
4Tbspfresh minced garlic
1/2cupolive oil
1Tbsppine nuts
1tspparmesan cheese
salt to taste
Extras or Substitutes
carrot leaves
walnuts
feta cheese
lemon juice
Instructions
Mince the garlic and the basil.
Grind the pine nuts with a mortar and pestle. Add in olive oil, basil, garlic and parmesan. Grind into a paste and add more olive oil as needed. (Or use a food processor but hand-grinding seems to bring out the flavor a bit more as it pulverizes the ingredients rather than chopping them.)
Add salt tot taste.
Use in a main pasta dish or add atop tomatoes, soup, or roasted potatoes and enjoy!
