Smashed Potatoes & Pesto
An herby and filling side dish or starter. Kids love helping to “smash” the potatoes!

Pesto Directions

Chop all the herbs and use a mortar and pestle to grind them into a paste
▢
Gradually add in olive oil, nuts, minced garlic, and parmesan cheese, grinding it all into the paste and adding more olive oil as needed
▢
Add salt to taste

First, boil the potatoes in salted water until cooked
▢
Lay the potatoes on a baking sheet and "smash" lightly with a flat bottomed bowl
▢
Drizzle in olive oil
▢
Lightly salt
▢
Sprinkle with herbs (we prefer Italian parsley and rosemary)
▢
Bake in the oven at 450F until golden brown
▢
Remove from the oven, drizzle with pesto and serve!
