Warm Carrot Quinoa Bowl

Cozy and nutritious, the warm carrot quinoa bowl is flavorful and filling. A favorite dish of mine for when I’ve been eating  junk, this one is a kickstart back in the right direction and I wake up feeling great the next day.


  • 2-3 Tbsp olive oil
  • 2-3 cloves of garlic minced
  • 4 cups cooked quinoa lightly salted
  • carrots sliced
  • 4-5 cups spinach whole
  • salt and pepper
  • parmesan cheese


  • Heat olive oil on medium to high heat in a large span and sauté minced garlic.
  • Slice carrots and add to the pan and sauté until al dente. (Do not let the carrots overcook/ get mushy.) Salt to taste.
  • In a separate pan, add a little olive oil and add in quinoa, warming on medium heat. Salt to taste.
  • In a serving bowl or in individually plated bowls, add a serving of quinoa to the bowl, layer in a handful of lettuce, and top with the hot carrot mixture. Top with a sprinkle of parmesan.  Serve a few minutes, after the Spinach has wilted and enjoy!
