Violet Endive Salad

A gorgeous savory + tart spring salad.
Ingredients
Instructions

Ingredients  

  • 2 heads of endives
  • 2 tblspn gorgonzola crumbles
  • 2 tblspn nuts pine nuts or crumbled walnuts
  • salt & pepper to taste
  • a couple splashes balsamic vinegar
  • 2 tblspn olive oil
  • 1 tblspn green drizzle optional
  • 1 tblspn minced onion optional
  • 1 tblspn fresh parsley chopped (substitute with any herbs such as basil or dill)
  • violets (substitute with any edible flower such as nasturtium or pansies)

Instructions

  • Separate washed endives and arrange on a platter.
  • Top with gorgonzola and nuts.
  • Sprinkle with minced onion (optional)
  • Salt and Pepper to taste.
  • Lightly drizzle with olive oil & vinegar.
  • Splash on green drizzle.
  • Sprinkle with finely chopped parsley or other herbs.
  • Top with violets.
