Turkey Lettuce Wraps

Lauren LIess' Turkey Lettuce Wraps
A light and nourishing deconstructed meal that comes together quickly and easily. We love putting out the meat and lettuce separately and family style so everyone can have fun making his or her own wraps and we can relax a little more with meal prep!

Ingredients  

  • 1 lb ground turkey
  • 1 head of butter lettuce
  • 1 cup spinach
  • 2-3 garlic cloves minced
  • 1/4 cup julienned cabbage
  • 1/4 cup pumpkin seeds
  • 1/4 cup pine nuts
  • 2-3 Tbsp parsley roughly chopped
  • 1 tsp grated ginger (optional)

Instructions

  • Prepare lettuce by tearing off leaves, washing, and patting dry.
  • In a medium saucepan, sauté onion.
  • Add in the ground turkey and start to brown on medium-high heat.
  • As the meat cooks, salt and add in minced garlic, pumpkin seeds, pine nuts, cabbage, and spinach (+ ginger if you’re doing the “optional” twist”.)
  • Once the meat has cooked, simmer on low and salt to taste.
  • Sprinkle in the parsley ( + the lemongrass if you’re doing the “optional twist”)
  • Serve in a bowl with lettuce leaves on a separate platter and let everyone wrap and eat family style or plate individual wraps on plates. (Serve with a side of soy sauce if you’re doing the “optional twist.”) Enjoy!

well, actually, lettuce is not my type. However, I’m really keen on wrap foods. I think I will try it one day.
