Smashed Potatoes & Pesto

An herby and filling side dish or starter. Kids love helping to “smash” the potatoes!
Serves 6 people, Prep time: 20 minutes, Cook time: 20 minutes


  • 25 Small Potatoes to fill a baking sheet
  • 2-3 tbsp Olive Oil
  • Salt and Pepper to Taste
  • 1/4 cup Fresh Herbs
  • 3/4 cup Pesto
  • 1 cup Basil Leaves
  • 1/4 cup Italian Parsley
  • 4 tbsp Fresh Minced Garlic
  • 1/2 cup Olive Oil
  • 1 tbsp Pine Nuts
  • 1 tsp Parmesan Cheese
  • Salt to Taste


Pesto Directions

  • Chop all the herbs and use a mortar and pestle to grind them into a paste
  • Gradually add in olive oil, nuts, minced garlic, and parmesan cheese, grinding it all into the paste and adding more olive oil as needed
  • Add salt to taste


  • First, boil the potatoes in salted water until cooked
  • Lay the potatoes on a baking sheet and "smash" lightly with a flat bottomed bowl
  • Drizzle in olive oil
  • Lightly salt
  • Sprinkle with herbs (we prefer Italian parsley and rosemary)
  • Bake in the oven at 450F until golden brown
  • Remove from the oven, drizzle with pesto and serve!
