Shaved Carrot Salad

A light and fresh salad with savory crunch. The dressing can be made in advance and saved for a few days! (Or make extra when you make this salad!)

Ingredients  

  • 20 carrots (or 2 bunches) finely shaved
  • 1/2 onion (yellow) minced
  • 1 garlic clove minced
  • 4 tbspn olive oil
  • 1 tbspn rice vinegar or white wine vinegar
  • salt & pepper to taste
  • 1 tbspn fresh greens or herbs (such as parsley, basil, dill, spinach, kale, lettuce) julienned

Instructions

  • Shave carrots and mince onion and garlic clove.
  • Place minced onions in a salad bowl and drizzle in olive oil and vinegar.
  • Salt and pepper to taste. (You want this pretty peppery and salty)
  • Muddle the onions in the dressing until softened.
  • Set aside for 30 mins or more.
  • Toss shaved carrots into bowl and toss well. Salt and ppepper to taste.
  • Top with julienned greens/ herbs.
