This week, Homework is all about de-cluttering the FRIDGE.  I realized I had a ridiculously large amount of eggs in the fridge along with a bunch of other random stuff so I decided to combine it all & make a frittata out of my leftovers and clean out the fridge at the same time.

 

Things don’t always work out for me in the oven but this one did and here’s how I did it:

KEY THINGS:  (all else can probably change depending upon your leftovers & you’d be fine)

18 eggs

Oven set at 375 degrees

20 minutes


 

 

 

To see the full recipe, check out the video but I basically just took a lot of ingredients from my fridge & garden:
-swiss chard, onions, garlic, peppers – and sauteed them.  I added in leftover diced grilled chicken and some lemon juice.

-I lightly coated my casserole dish in olive oil

-I whipped 18 eggs in a bowl and poured it into the casserole dish

-I spread in my sauteed mixture

-I added fresh diced tomatoes, and chopped basil, parsley and chives.  Leftover cheese (I did manchego & parmesan)

-LOTS of salt & pepper

-Popped it in the oven on 375 for twenty minutes

-I cut around the sides so it wouldn’t stick and turned my dish upside down on a cutting board

-Added more chives, cheese, basil & salt & pepper
