Herbed Peppers

Our favorite solution for extra peppers: dress them up with herbs and parmesan for a wholesome entrée or quick side dish. This is a great veggie dish to ease kids into… it’s cheesy and savory but packed with vitamins.
Serving 5 People, Prep Time: 5 Minutes, Cook Time: 10 Minutes


  • peppers any kind/color
  • parmesan cheese shaved/sliced/shredded
  • 1-2 tbsp olive oil
  • rosemary fresh or dried
  • rosemary hydrosol


  • Preheat oven to 450.
  • Slice peppers and lay flat on a baking sheet or pan.
  • Lay a slice of parmesan cheese on each piece of pepper or sprinkle shaved/shredded cheese on the peppers.
  • Lightly drizzle in olive oil.
  • Spray rosemary hydrosol liberally over the peppers and/or sprinkle rosemary over top.
  • Bake 8-12 minutes.
  • Remove when cheese is sizzling and slightly browning and peppers are al dente. (or leave in longer and really let the peppers cook and the cheese brown).
  • Remove, finish with salt, and serve.
