Herb Frittata

This wholesome and herby frittata is loaded with grilled chicken and vegetables, making it the perfect way to start or end the day.
Prep Time: 15 Minutes, Cook Time: 25 Minutes


  • 18 eggs
  • 1/2 cup Swiss chard minced
  • 3/4 cup onion minced
  • 1/2 cup green pepper minced
  • 1 1/2 cup grilled chicken diced
  • 2-4 Tbsp lemon juice
  • ~ 10 fresh tomatoes diced
  • 1/4 cup basil chopped
  • 1/4 cup parsley chopped
  • 1/4 cup chives chopped
  • 1/2 cup cheese


  • Sauté swiss chard, onions, garlic, peppers.
  • Add diced grilled chicken and some lemon juice to sauté mixture.
  • Lightly coat casserole dish in olive oil.
  • Whip 18 eggs in a bowl and pour it into the casserole dish.
  • Spread in sautéed mixture to casserole dish.
  • Add fresh diced tomatoes, and chopped basil, parsley and chives.
  • Spread cheese on top (I did manchego & parmesan).
  • Add LOTS of salt & pepper.
  • Heat in the oven on 375 for 20-25 mins.
  • Cut around the sides so it doesn’t stick and put a cutting board over the dish and quickly flip it. Remove casserole dish.
  • Top frittata with chives, cheese, basil, salt & pepper.

I made this when I realized I had a ridiculously large amount of eggs in the fridge along with a bunch of other random stuff so I decided to combine it all & make a frittata out of my leftovers and clean out the fridge at the same time.

Once it was out of the oven we ate it right away and it was delicious!!! So whatever it is you’ve got going on in your fridge this week, think about doing a clean-out by adding your leftovers in some eggs for a super easy meal. If you do end up making a good meal out of your leftovers.
