Ground Turkey Soup

Lauren Liess' ground turkey soup
A flavorful, and comforting soup with ground turkey, gorgonzola cheese, spinach, and pine nuts. This is a perfectly hearty fall or winter soup!

Ingredients  

  • 2-3 Tbsp olive oil
  • 3 cups chicken broth
  • 1 lb ground turkey
  • 1/4 white onion
  • 4-5 garlic cloves
  • 1/4 cup pine nuts
  • 2 cups fresh spinach
  • 1/4 cup gorgonzola cheese crumbled
  • 1/2 lb baby potatoes cut in half

Instructions

  • In a large pot on medium heat begin to sauté the onion and garlic in olive oil.
  • Next, add in the ground turkey and pine nuts. Season with salt and pepper.
  • At the same time, in a separate pot, sauté the chopped potatoes over medium-high heat and season with salt and pepper and cook until softened.
  • Once the turkey has fully cooked, lower the heat and mix in the crumbled gorgonzola and spinach and let simmer.
  • Add potatoes to the turkey mixture. Add in the chicken broth and stir.
  • Simmer on low heat for 5-10 minutes and serve.
