Garlic Lemon Thyme Cauliflower

A cozy and hearty dish, cauliflower, topped with chopped greens, almonds, and parmesan. A favorite spring-fall staple around here.
Serving: 8 People, Prep Time: 20 Minutes, Cook Time: 25 Minutes


  • 1 head of cauliflower chopped
  • lemon thyme hydrosol or thyme sprigs
  • 1/4 cup olive oil
  • 2 garlic cloves minced
  • salt and papper to taste
  • 1/2 fresh squeezed lemon
  • 1/2 cup walnuts chopped
  • handful of chopped herbs basil, parsley, spinach, or beet greens
  • 1 Tbsp parmesan cheese grated or shredded


  • Preheat oven to 450
  • Chop the cauliflower
  • Chop the walnuts and set aside
  • Spray lemon thyme hydrosol onto the cauliflower (8-10 sprays)
  • Combine olive oil, salt, pepper, garlic and more lemon thyme hydrosol in a large bowl and stir until well mixed
  • Add the cauliflower and walnuts to the bowl and toss until covered in the olive oil mixture
  • Pour the cauliflower-olive oil mixture into a casserole dish
  • Salt and pepper
  • Top with chopped greens and parmesan cheese
  • Cook for 20-25 minutes
  • Pull out of the oven and enjoy!
