Fresh Tomato Bisque

This classic soup is as easy to make as it is to eat. A splash of white wine brings out the acidic sweetness of the tomatoes, and the remnants make an excellent dinner pairing.
Serving Size: 6 People, Prep Time: 5 Minutes, Cook Time: 20 Minutes

Ingredients  

  • 1-2 tbsp olive oil
  • 1 onion chopped
  • 10 medium tomatoes chopped
  • 3/4 large garlic bulb finely chopped
  • 1/4 - 1/2 cup dry Pinot Grigio or other dry white
  • 1/2 - 3/4 cup skim milk
  • 32 oz chicken broth
  • Basil thinly sliced
  • shredded parmesan

Instructions

  • In a pot, sauté the chopped onions in olive oil on medium to high heat. Add the chopped tomatoes and stir frequently until just barely cooked (6-8 minutes). Add in the finely chopped garlic and continue to stir.
  • Add in the white wine and simmer to cook out the alcohol. Add in the chicken broth.
  • Blend until smooth and creamy (An emulsion blender is the easiest)
  • Lower the heat and add the skim milk. Stir or blend again. Salt and pepper to taste.
  • Pour into bowls and top with fresh basil and parmesan cheese.
