Classic Homemade Pesto

A salty classic, pesto instantly elevates any meal with vibrant flavors. Pesto is a staple in our house and we use it on pasta, to top off soups, fresh veggies and casseroles!

  • 1 cup fresh basil leaves finely chopped
  • 1/4 cup Italian parsley
  • 4 Tbsp fresh minced garlic
  • 1/2 cup olive oil
  • 1 Tbsp pine nuts
  • 1 tsp parmesan cheese
  • salt to taste
Extras or Substitutes
  • carrot leaves
  • walnuts
  • feta cheese
  • lemon juice

  • Mince the garlic and the basil.
  • Grind the pine nuts with a mortar and pestle. Add in olive oil, basil, garlic and parmesan. Grind into a paste and add more olive oil as needed. (Or use a food processor but hand-grinding seems to bring out the flavor a bit more as it pulverizes the ingredients rather than chopping them.)
  • Add salt tot taste.
  • Use in a main pasta dish or add atop tomatoes, soup, or roasted potatoes and enjoy!
