Inspired by the foraged watercress we found, this pretty warm bowl of goodness is earthy and flavorful.Prep Time: 30 Minutes, Cook Time: 20 Minutes
Blanche approximately 4 cups of watercress, squeeze out all the water and roughly chop.
Pour approx 1.5 tablespoons olive oil in a bowl and add in chickpeas, mushrooms, 1 tsp lavender, and garlic and stir.
Pour 1 tablespoon olive oil in a large pan with a lid on medium heat and add in all ingredients from bowl. Cook on low for 7-10 minutes, covering with a lid and stirring frequently until mushrooms soften.
Add in watercress and 1 more tsp lavender. Cook 5-10 more minutes.
