pear galatte

Quick and easy enough for a weeknight treat, use whatever fresh fruit you have around to make this beautiful “quickie”rustic version of a traditional pie.
Prep Time: 10 Minutes, Cook Time: 20 Minutes

Ingredients  

  • 2 Pillsbury pie crusts
  • 6 pears thinly sliced (we used bosc pears)
  • 4 tbsp olive oil
  • 2 tbsp lemon sugar
  • 1/2 cup all purpose flour save a little extra to coat the pan with and sprinkle on top
  • 1 tbsp ground cinnamon
  • 2 tsp vanilla extract
  • zest from 1 lemon
  • 2 tsp honey to drizzle on top
  • 1 egg

Instructions

  • Preheat oven to 400
  • Thinly sliced pears
  • In a large bowl, combine sliced pears, olive oil, lemon sugar, lemon zest, flour, cinnamon, vanilla extract.  Drizzle honey on top. (OR keep the pears separate and lay them out beautifully on the dough and mix all of the other ingredients in a mixing bowl and pour over, coating the pears thoroughly.)
  • Spread out premade dough (we used Pilsbury) and spread the pear mixture out
  • Fold over four sides to make a square
  • Whisk egg & coat the crust with the egg using a pastry brush.
  • Sprinkle with a little flour and herbs and/ or edible flowers. (Lavender gives it a beautiful flavor!)
  • Bake for 15-20 minutes until the crust is golden brown
  • Serve with vanilla ice cream and enjoy!

A few years ago I was visiting with my cousin Tracy and she whipped up a super simple blackberry galette from the fresh picked berries the kids found and Pillsbury dough.  It was ready in a few minutes and was HEAVEN!! We had a big bowl of pears that needed to get eaten the other night so the girls and I got to work.  We made a hot mess out of the pears but it was still delicious and beautiful! I’ve always wanted to make the pretty perfectly laid out pear galettes I’ve seen in pictures but it was honestly more fun to let the girls stir away and have at it. So really, this recipe can be done in one of two ways: 1) combine the sliced pears and all ingredients in a bowl and stir (this is the quick kid-do-their-own-thing- way) or 2) perfectly lay out the sliced pears, mix all of the other ingredients in the bowl and pour over the pears, thoroughly coating them. (this is the prettier way)
