Baked Brie & 'Maters

Lauren Liess Baked Brie
A quick, one-pan wonder of melty cheese and bright tomatoes that feels like a treat. Everyone goes crazy for this sizzling party starter!
Serving: 6 People, Prep Time: 5 Minutes, Cook Time: 10 Minutes


  • 1 brie wheel
  • 2-3 large tomatoes roughly chopped
  • 2-3 tbsp olive oil
  • sprinkle of crumbly cheese (feta or gorgonzola)
  • 2 garlic cloves minced
  • 1 tbsp parsley
  • salt to taste


  • To start, roughly chop tomatoes into bite sized pieces and mince the garlic
  • In a small cast iron skillet, drop in the brie, tomatoes, and garlic
  • Drizzle with olive oil and season with salt and fresh parsley
  • Top with crumbly cheese and bake in the oven for 15 minutes at 350 degrees or until the cheese is bubbling
  • Remove from the oven and allow the cheese to cool a few minutes before serving with crunchy bread or crackers. Enjoy!
